Healthy & Delicious Thanksgiving Side Dish

This Thanksgiving, try this fresh and healthy recipe for one of the most popular side dishes.

Onion Topping

  • 2 medium onions, sliced thin
  • ¼ cup flour
  • 2 tablespoons Panko-style bread crumbs
  • 1 teaspoon salt
  • Preheat oven to 475 degrees.  Mix onions, flour, bread crumbs & salt together and place on baking sheet that has been liberally coated with non-stick cooking spray.  Cook for 30 minutes, tossing every 10 minutes.

Green Bean Casserole

  • 1 teaspoon salt
  • 1 pound fresh green beans, washed & trimmed
  • 2 tablespoons butter
  • 12 ounces mushrooms, sliced
  • ½ teaspoon pepper
  • ¼ teaspoon nutmeg
  • 2 tablespoons flour
  • 1 cup chicken broth
  • 1 cup half & half
  • Preheat oven to 400 degrees.
  • Boil green beans in salted water for five minutes.  Remove and drain.
  • Melt butter in a large pan.  Add mushrooms, salt and pepper.  Cook for five minutes. Sprinkle flour over the mushrooms and stir to coat.  Add the broth; letting simmer for one minute.  Reduce heat to low and add the half & half.  Cook, stirring frequently, until sauce thickens.
  • Remove from heat and add green beans and 1/3 of the onions.  Place in a casserole dish and cover with remaining onions.  Cook 10-15 minutes.
