A Healthy Fall Recipe: Baked Apples with Dried Cranberries and Toasted Walnuts

Harvest season brings in a wide array of fruits and vegetables including apples, pumpkins, pears, broccoli, and cabbage. Take advantage of nature’s bounty by working with in-season produce. Here is a baked apple recipe that will satisfy your sweet tooth without overriding your waist line.

For a simple yet decadent apple treat with a nutritional punch, core six apples, preferably a sweet red variety like Red Delicious. Place these in a baking dish that is lightly sprayed with oil to prevent sticking. Fill the apples with juice sweetened dried cranberries along with one to two drops of vanilla Stevia. Sprinkle cinnamon lightly over the top. Bake in the oven at 350 degrees F for 20 minutes or until the skin begins to shrivel.

While the apples are baking, toast 1 cup of raw walnuts over medium heat for approximately 2 minutes or until the nuts begin to get fragrant from the release of oils. Chop the toasted walnuts and sprinkle over the baked apples. Top with a dollop of frozen vanilla yogurt and serve warm.
